Methods and systems for making a high-purity a-lactalbumin composition are described. The composition may be made by providing a whey protein mixture, and adding an alkaline solution to the mixture to make the mixture alkaline and promote the aggregation of B-lactoglobulin proteins. The alkaline whey protein mixture is filtered into a β-LG aggregate composition and a a-LA enriched composition. A final a-lactalbumin enriched composition sourced from the a-LA enriched composition is dried into the high- purity a-lactalbumin composition (a powdered dairy composition) that is at least 70 wt.% α-lactalbumin on a protein basis. A protease enzyme may optionally be added to the a- LA enriched composition to form an enzymatically treated a-LA enriched composition that becomes the source of the final α-lactalbumin enriched composition.

A method of manufacturing a nutritional powder with in situ protein hydrolysis using extrusion technology is provided. The method includes adding an intact protein source, a protease component, a fat component, and water to an extruder to form a slurry. The slurry is emulsified within the extruder to form an emulsion. The emulsion has a total protein content of 5% to 35% based on the weight of the solids of the emulsion and at least a portion of the protein is hydrolyzed within the extruder to achieve a degree of hydrolysis of 5% to 30%. The emulsion is then dried and milled to form a nutritional powder.

The present disclosure is directed to a method for reducing immunoreactivity of a food including (a) incubating a food that contains at least one protein with a cross-linking enzyme to form a food that includes at least one cross-linked protein; and (b) fermenting the food including the at least one cross-linked protein with a microorganism to form a modified food including a hydrolysate of the at least one cross-linked protein, wherein (a) is performed before (b) and wherein a level of immunoreactivity of the modified food is less than a level of immunoreactivity of an unmodified food including at least one protein. Modified foods obtained from the present method are also provided.

The invention relates to a food supplement, a method for increasing the bacterial mass in the rumen of a ruminant and a food preparation and corresponding uses. The food supplement comprises hydrolysed proteins that have a degree of hydrolysis above 28% and/or contain more than 23 mg of alpha-amino nitrogen per gram of protein and/or contain more than 10% of free amino acids. The hydrolysed proteins are animal proteins, preferably haemoglobin. The supplement is administered orally, included in a food preparation, in liquid, concentrated or dehydrated form. The supplement forms the basis of a method for increasing the bacterial mass in the rumen of a ruminant, in which a supplement containing hydrolysed proteins in accordance with the invention is added to the diet of the ruminant.

The present invention contemplates the creation of a low fluoride crustacean oil processed from a phospholipid-protein complex (PPC) formed immediately upon a crustacean (i.e., for example, krill) catch. Further, the crustacean oil may also have reduced trimethyl amine and/or trimethyl amino oxide content. The process comprises disintegrating the crustaceans into smaller particles, adding water, heating the result, adding enzyme(s) to hydrolyze the disintegrated material, deactivating the enzyme(s), removing solids from the enzymatically processed material to reduce fluoride content of the material, separating and drying the PPC material. Then, using extraction with supercritical C0 2 or supercritical dimethyl ether, and/or ethanol as solvents, krill oil, inter alia, is separated from the PPC. In the extraction the krill oil can be separated almost wholly from the feed material.
