A method of producing bleached microcrystalline cellulose which method comprises neutralizing or alkalizing an acidic microcrystalline production reaction mixture slurry, typically produced by acid hydrolysis or by electronic beam irradiation, followed by adding an oxidant to such reaction mixture. This practice of this method permits the production of microcrystalline cellulose having desirable color stability as well as compression characteristics suitable for pharmaceutical binder use from paper grade and other low purity pulps.

The present invention is directed to a co-attrited stabilizer composition comprising: a) microcrystalline cellulose in an amount of from 20%-90% by weight of the composition; b) a hydrocolloid in an amount of from 5%-50% by weight of the composition, wherein the hydrocolloid is selected from at least one member of the group consisting of carboxymethyl cellulose having a degree of substitution of at least 0.95, pectin, alginate, carrageenan, xanthan gum, agar gum, wellan gum, or gellan gum; and c) a starch in an amount of from 5%-50% by weight of the composition, wherein the stabilizer composition has a gel strength (G') of at least 25 Pa when measured after 24 hours in a 2.6 % solids water dispersion at 20°C. The composition is useful as a stabilizer, particularly in food and beverage products.

This invention relates to making and using a stabilizer that is effective in small amounts and, particularly useful for stabilizing low solids liquids, e.g., dispersions, emulsions, and suspensions, used in foods, pharmaceuticals, nutraceuticals, and similar industrial applications, which comprises, microcrystalline cellulose, (preferably, colloidal hydrolyzed MCC); a first carboxymethyl cellulose having a viscosity of 30 - 85 cP at 2% in deionized water; and, a degree of carboxymethyl substitutions of 0.60 to 0.85, and a second carboxymethyl cellulose having a viscosity of 400 - 800 cP at 2% in deionized water, and a degree of carboxymethyl substitutions of 0.80 to 0.95; and, the stabilizer may be made by preparing a moist MCC "wetcake"; thoroughly mixing the wetcake with a dry blended mixture of low DS and medium DS, CMCs; preferably, in a MCC/low DS CMC/medium DS CMC ratio range of about 88/6/6 to about 92/4/4, adding that mixture to an extruder; preparing a slurry of the extrudate in deionized water; and, optionally, pumping the slurry to a spray dryer to produce a powder.

A method of making a water-dispersible composition comprises coprocessing a microcrystalline cellulose wetcake and at least one starch by co- attrition to form an admixture comprising colloidal microcrystalline cellulose and said at least one starch. The admixture is subsequently dried. Optionally, the admixture may be combined with an additional hydrocolloid, such as a galactomannan, before or after drying. A dried colloidal microcrystalline cellulose composition may then be dispersed in an aqueous media to form the food/beverage product. In particular, the composition may be dispersed in an aqueous media containing, for example, a protein to form a low pH beverage composition.
