A solid food ingredient comprising edible fungal particles especially consisting substantially of fungal mycelia is described. The ingredient may be combined with other ingredients to produce a wide range of foodstuffs or food ingredients including desserts (e.g. yoghurt), reconstitutable drinks or soup and extruded foodstuffs, (e.g. savoury snack foods). Foodstuffs prepared may have medical applications (e.g. for treatment of joint mobility disorders, reducing fat uptake, lowering cholesterol, immune function stimulators, use as a pre-biotic and/or for affecting satiety).

The present invention relates to a feed-stuff for young animals, particularly piglets, to be administered during the first weeks of life and comprising starch, vitamins, and minerals, whereby it has a composition which in general resembles the composition of the mother milk with regard to the ratio of casein to whey proteins, that the lactose contents has been adopted to the lactose content of the mother milk, that the starch present is gelatinized and is substantially free of fibers and other mineral and trace substance binding carbohydrate complexes, and that it contains organic, acidifying compounds to maintain a low pH in the stomach.

Powder-form foaming creamer according to the invention contains vegetable fat such as palm, coconut or soya oil in the amount of about 10 to 40 % by weight, having melting point of 31 DEG C to 45 DEG C; dairy fat in the amount of about 0.06 to 0.1 % by weight; hydrocarbons in the form of maltodextrin having a DE value of 20 to 35 in the amount of about 30 to 60 % by weight, or a glucose syrup having a DE value of 30 to 50 in the amount of about 40 to 75 % by weight, or lactose in the amount of about 30 to 60 % by weight; whey-protein and casein, where the source of the above proteins is a dry skim milk having fat content below 0.6 % by weight and a WPNI value of 4.0 to 4.8, and the amount of powder should be of about 10 to 40 % by weight, preferably 12 to 17 % by weight; stabilizing salts in the form of dibasic potassium orthophosphate in the amount of about 0.5 to 3.0 % by weight, and natural hydro-colloids in the form of gelatine in the amount of about 0.1 to 1.0 % by weight.

The present invention relates to a method for the manufacture of a composition comprising proteins and fats, said method providing a simple and non-expensive way of obtaining fat-containing proteinaceous products of high nutritional value that are easy to handle and at the same time possess high stability towards coalescence and oxidation. More particularly, a method is provided for the manufacture of a composition comprising protein and fat in disperse form, the method comprising the following steps: (i) providing a suspension having a pH value higher than 7.0, said suspension comprising water, proteinaceous material, fat, and optionally alkali; (ii) incubating the suspension from (i) at a temperature in the interval 50 - 150 °C; (iii) homogenizing the suspension from (ii) to form a dispersion; and (iv), if desired, subjecting the dispersion from (iii) to a subsequent treatment; wherein the proteinaceous material in step (i) comprises vegetable-based proteinaceous material, and/or yeast-based proteinaceous material; wherein the suspension in step (i) comprises at least 5 % fat by weight of dry matter. The current invention also relates to the compositions obtained by the method and to compositions obtainable by the method of the invention and, further, to the use of these compositions.

The invention relates to a method for enzymatically obtaining protein hydrolysates for human consumption, animal feed and cosmetics. The process involves the use of a proteolytic composition derived from fish, such as Cod ( Gadus morhua ), to obtain hydrolysates which have a non-bitter taste and retain the flavor and aroma of the protein-containing material which is hydrolyzed: e.g. when hydrolyzing protein-containing material from marine organisms or parts thereof, such as fish, shrimp, lobster or other seafood according to the invention, a protein hydrolysate is produced that has a characteristic natural flavor of the organism. Also provided are food products comprising the hydrolysates of the invention, such as soup, sauce, cheese, HVP, meat extract and flavoring agent, broth, paté, mousse, frying dough, orly dough, and pastries.

The present invention relates to a method for preparing a blood plasma powder, in which (1) a fibrinogen concentrate having a fibrinogen content of at least 1 percent by weight is prepared from blood plasma, and in that (2) said fibrinogen concentrate is spray-dried to form a powder, apparently intended for use in foodstuffs, in such a manner that the temperature of the fibrinogen itself is maintained at less than 60 °C. Furthermore, the invention relates to a method for bonding together pieces of foodstuff and to a method for increasing the consistency of a liquid or semi-solid foodstuff.
