This disclosure relates to hydrophilic particles, compositions, processes of production, and uses in dietary management and digestive disorders. In certain embodiments, the particle comprises a protein coated in a hydrophilic polymer comprising monomers with branched polyalkoxys, such as but not limited to, polyethylene glycol. Typically, the protein is a glucose oxidase, galactose oxidase, lipase, other digestive enzyme, or combinations thereof. In certain embodiments, compositions comprising particles disclosed herein are used to reduce blood glucose levels or prevent elevated blood glucose levels in a subject.
