A method for fermenting carbohydrate-rich crops is provided. Sugar beet, sugar cane, sweet sorghum, tropical maize hybrids and fruits are rich in simple sugars; potato, sweet potato, cassava and yam are rich in starch; and Jerusalem artichoke is rich in inulin. This method uses vacuum infusion to infuse yeast into the intercellular space (apoplast) of the parenchyma tissue. The simple sugars diffuse into the apoplast, come into contact with the yeast and produce ethanol. Ethanol can be extracted from the crop by vacuum stripping or crushing or can be left inside the starchy crop to preserve it. In some variants, pectinase enzymes degrade the parenchyma cell walls to speed up diffusion of simple sugars to the yeast, speed up diffusion of amylase to starch granules or speed up diffusion of inulinase to insoluble inulin.

More particular, the invention relates to a procedure to convert starch using a hypervalent iodoarene derivative as the oxidant to convert starch into an oxidized derivative wherein the hydroxyl groups at the C 6 position and the C 2 -C 3 position are oxidized. In an even further embodiment the present invention relates to a method to convert starch using a hypervalent iodoarene derivative such as bisacetoxyiodobenzene as the oxidant into dialdehyde starch (DAS) as the reaction product. The procedure also comprises a method to regenerate the spent oxidant.

The invention relates to a process for the production of a fructooligosaccharide (FOS) composition on industrial scale, comprising the steps of: a) providing a raw material containing sucrose; b) bringing the raw material together with an enzyme to form a mixture, whereby the enzyme has an endo-inulinase activity and/or a fructosyltransferase activity and is in free, non-immobilized form; c) exposing the mixture to conditions whereby FOS-forming can take place for an amount of time such that the FOS in the mixture constitutes at least 45 wt. % of the total amount of carbohydrates in the mixture, thereby forming the FOS composition; d) optionally deactivating the enzyme; e) recovering the FOS composition. The invention further relates to Fructooligosaccharide composition (FC) wherein: a portion of at most 2 wt.% of the carbohydrates in the FC consists of oligosaccharides that have a degree of polymerisation (DP) of 7 or more; and at least 56 wt.% of the fructooligosaccharides in the FC have a DP of 3 as measured in HPLC; and the FC is obtained from sucrose in an enzymatic process, whereby no enzyme is used that is obtained from a genetically-modified organism.

The present invention relates to processes for the production of a non-bitter chicory extract comprising subjecting an aqueous chicory extract to UV treatment and alkaline treatment or subjecting an aqueous chicory extract with a pH of below 7 to a UV treatment or subjecting an aqueous chicory extract with a pH of below 7 to UV treatment or subjecting an aqueous chicory extract to an alkaline treatment at a pH greater than 10, at a temperature of 0 to 75 DEG C and for a time of at least 15 minutes. The present invention also relates to a further process for the preparation of a non-bitter chicory extract comprising subjecting an aqueous chicory extract to ethanol precipitation, separating the precipitate by filtration and drying the precipitate.
