Provided is a composition containing an admixture of xanthan gum and konjac mannan in a specific weight ratio that is useful for making a stable aqueous hydrocolloid. Also provided is a stabilized drink composition containing an admixture of a specific weight ratio of xanthan gum to konjac mannan, protein solids, water and optionally a salt. Also provided is a method for stabilizing aqueous colloid suspensions. Also provided is a method for stabilizing drink compositions.

A gelled food concentrate comprising a salt-sensitive gum, salt in an amount sufficient to keep the salt-sensitive gum in a salted-out state, a salt-stable gelling system in an amount effective to provide a gelled food concentrate, water, which gelled food concentrate, after dilution in an aqueous liquid, the aqueous liquid being water, can result in a ready-to-eat end product comprising: from 0.1 to 2.5 wt% of salt and from 0.01 wt% to 3.5 wt% of a salt-sensitive gum, the ready-to-eat end product having a viscosity of higher than 15 mPa.s at 20 C°.

The present disclosure relates to soy protein-based powdered nutritional formulas, such as infant or toddler formulas, that contain lutein and fructooligosaccharide (FOS). The FOS stabilizes lutein present in the formula, resulting in less lutein degradation over the shelf-life of the formula. When fed to infants, the nutritional formulas provide an infant stool pattern, frequency, and color more closely resembling that of breastfed infants.

An integrated method for the global recovery and production of carbohydrates, in particular inulin, pectin, fructose-glucose syrup and vegetable fibre from Jerusalem artichoke tubers, in which the crushed tubers are subjected to extraction in water in a cavitation extractor, including the phases of : a) subjecting the crushed tubers to extraction in water with a volume ratio from 1:3 to 1:8, with a cavitation index from 0.05 to 0.1 for times from 10 to 15 minutes, to provide the extraction in liquid phase of the carbohydrate fraction containing mainly inulin; b) separation of the liquid phase containing inulin from the solid phase through filtration; and c) purification and concentration of the aqueous filtrate containing inulin; for the production of pectin the Jerusalem artichoke tuber pulp, separated from the filtrate in phase b) is subjected to extraction in a rotary cavitation extractor from 2.1 to 2.5, for a time from 45 to 300 seconds; preferably, a portion of the aqueous concentrate containing inulin, produced in phase c), is subjected to hydrolysis with citric acid to provide a fructose-glucose syrup.

The present invention relates generally to a method of blunting the postprandial glycemic response to a meal by feeding an acid controlled induced viscosity fiber system. The first component of the induced viscosity fiber system is anionic soluble fiber. The second component of the induced viscosity fiber system is water-insoluble, acid-soluble multivalent cations. The fiber system will typically be incorporated into a meal replacement nutritional. The present invention also refers to a method of delivering soluble fiber to diabetics and to persons needing to lose weight. Additionally, the invention refers to a method of promoting the feeling of fullness and satiety by feeding a nutritional product containing the induced viscosity fiber system.

The gelling agent is a degraded root or tuber starch comprising at least 95 wt.% of amylopectin, based on dry substance of the starch. The gelling agent according to the invention is particularly suitable for use in food products.

The invention relates to a dairy-free prebiotic instant powder which contains oligo-fructose and at least one constituent that is selected from mineral substances, minor nutrient elements and plant extracts. The powder preferably contains additional vitamins. The prebiotic instant powder can be used for producing a beverage having prebiotic properties or can be subsequently processed in order to produce tablets, including effervescent tablets and capsules. In addition, the inventive instant powder can be used as a nutritional supplement which contains dietary fiber, has prebiotic properties, and is to be mixed into meals containing liquid and into beverages.

The present invention relates to the use of one or more non-digestible polysaccharides selected from the group consisting of dextrans having a molecular weight of 8 kD to 40,000 kD, hydrolysed (gluco)mannans having a molecular weight of 0.5 kD to 1,000 kD and hydrolysed (galacto)mannans having a molecular weigth of 0.5 kD to 1,000 kD for the preparation of a nutritional composition to reduce the uptake of high molecular weight substances, allergens and microorganisms through the intestinal wall, more particularly to reduce transport of high molecular weight substances, allergens and microorganisms through the tight junctions in the intestines, the rise in the viscosity of the nutritional composition caused by the polysaccharides being less than 20 mPa.s. The nutritional compositions can be used to prevent or to treat allergy, allergic reactions, sepsis and inflammatory processes, such as can arise under emotional and physical stress, ischaemia, reperfusion damage during and after operations, after radiation treatment and/or chemotherapy of cancer patients and in the case of inflammatory diseases of the intestine, diarrhoea and allergies.
