Embodiments disclosed herein provide methods for reducing microbiological contamination during the cheese making process. Inhibition of microbial outgrowth is achieved by introducing an inhibitor at low concentration during the cheese making process. The inhibitor composition inhibits microbial outgrowth of pathogenic microbes associated with the cheese making process and controls and/or eliminates spoilage microorganisms to prolong shelf-life and maintain quality of the final cheese product. The inhibitor composition may be added to the milk prior to curd formation, after curd formation but prior to setting, or both. The inhibitor composition may be used with both pasteurized and un-pasteurized cheeses.

Since the fulvic acid mineral seasoning liquid is contained, the dissolution of the indigestible dextrin is suppressed even without the use of modified starch and, further, qualities such as deliciousness, color, eating texture, and flavor are maintained.

The anti-allergy composition can exhibit an anti-allergy effect by oral ingestion. In particular, it is useful for inhibiting Type I allergy such as allergic rhinitis, hay fever, allergic conjunctivitis, atopic dermatitis, allergic asthma, urticaria, food allergy, and anaphylaxis. In addition, the composition can be also applied to a skin. By combining garlic and apple cider vinegar into one convenient, easy to take tablet, capsule, or gel encapsulated liquid, a person only has to consume one pill instead of two. Furthermore, consumption of garlic and apple cider vinegar in pill form allows for a higher concentration of active ingredients than are present in naturally occurring garlic and apple cider vinegar. Furthermore, potentially offensive tastes and odors present in naturally occurring garlic and apple cider vinegar are avoided.

Food compositions whereby natto kinase, which is a component of natto, can be easily taken; and food compositions comprising a combination of a Japanese food material natto with a western food material fermented milk product, for each of which some people have a dislike, so as to achieve the hygienic advantages of both of these materials and expect specific hygienic effects. Namely, food compositions comprising a freeze-dried fermented milk product, natto kinase and carriers usable in foods; and functional foods containing these components which have effects of preventing thrombosis, improving blood fluidity, preventing platelet aggregation and ameliorating lipid metabolism. These food compositions enable not only to easily take the components of the fermented milk product and natto without showing the characteristic smell of natto but also to achieve hygienic effects including amelioration in intestinal disorders, immnopotentiation and antitumor activity caused by the fermented milk product as well as the prevention and treatment of thrombosis owing to the synergistic effect thereof with natto kinase.
