摘要: Disclosed are embodiments of a composition including propanoic acid, a C4 acid salt, and a component selected from a C2-C5 acid ester and a C2-C5 aldehyde and combinations thereof. The composition is provided in an aqueous medium. Each of the propanoic acid and the C4 acid salt are independently present in an amount at least partially sufficient to provide to said composition a pH greater than about 4.4.

摘要: Examples provide a fruit ripening rack having a plurality of chambers for on-site produce ripening at a retail location. A controller component generates predicted demand for ripened fruit on a selected date at a selected location based on transaction history data and/or seasonal demand. The controller component calculates the quantity of fruit based on the predicted demand. The controller component determines conditions within each chamber to accelerate ripening of the calculated quantity of one or more types of fruit to one or more selected levels of ripeness on the selected date. The conditions include amount of ethylene gas in each chamber, length of exposure to the ethylene gas, temperature inside the chamber and/or humidity level inside the chamber. The fruit ripening rack controls internal conditions within each chamber to provide variable fruit ripening in accordance with per-chamber configurations to satisfy predicted daily demand at the selected location.

摘要: The present invention is direct to an edible composition in which fruit, vegetables and/or nuts, in conjunction with a hydrocolloid, are treated with pressure and/or heat to form an edible composition that is dimensionally stable, ambient stable for at least 12 months, has a moisture content greater than 50 wt. %, has a pH less than 4.5, has a water activity greater than 0.5, is commercially sterile, is free of artificial flavors, has a solids content greater than 10 wt. %, and does not exhibit syneresis. Also provided is a method for preparation of the edible composition.

摘要: A container includes a metal end applied and sealed to an all-thermoplastic container body by a crimp-seaming or double-seaming operation. The metal end has an outer curl joined to a chuck wall that extends down from the curl. One or both of the inner surface of the container side wall and the outer surface of the chuck wall has/have a heat-sealable material thereon. The metal end is crimp-seamed or double-seamed to the container body and the heat-sealable material(s) are heated to soften or melt such that the interface between the chuck wall and the side wall is fused. The interface is oriented along a direction relative to internal pressure exerted on the metal end such that stress on the interface caused by the internal pressure is predominantly shear stress.

摘要: A method for deep vacuum packaging of a food product and a system for implementing this method. The food product and at least one additive are placed in a mixing device. The mixing device is evacuated and its contents are mixed to ensure a penetration of the additive(s) in the food product and to outgas the mixture until an absolute pressure is less than or equal to 30 mbar. The temperature of the food product is less than the boiling temperature of the liquid and the additives contained therein at a particular pressure. At least a portion of the mixture cold blanched is packaged in a tight container. The container is optionally pasteurised/sterilized in a short time by controlling the pressure and temperature conditions such that the container does not open or become crushed under the effect of a pressure difference between the inside of the container and the autoclave.

摘要: An optimized package for holding a perishable produce that balances between optimum aerobic and anaerobic conditions. The package has a body, formed of a package film having a first size and shape, formed with laser micro perforations formed according to a relationship between a shelf life of said first contents in said package for different oxygen transfer rates expressed as volume of oxygen per time period per package per atmosphere. This is set to optimize between anaerobic conditions and aerobic conditions. There are a number and size of micro perforations, to obtain an optimum oxygen transfer rate. The micro perforations can be formed in a location of the package which retains airflow through the micro perforations when multiple of said packages are stacked. There can also be a humidity reduction device, which can be a valve, or a vapor transmitting film, or a hydroscopic salt on the exterior of the film.
