PROCESS OF MICROBIC BIOTECHNOLOGY FOR COMPLETELY DEGRADING GLUTEN IN FLOURS The present invention concerns the use of lactic acid bacteria selected and fungal enzymes for the gluten complete degradation from both bread and durum wheat, barley, rye and oat flour. In particular, the invention concerns the use of lactic acid bacteria selected and fungal enzymes for the gluten complete degradation (residual gluten concentration lower than 20 ppm) of cereal flours, which after detoxification can be used according to a standardized biotechnological protocol for the production of various gluten- free foods.
Abstract:
The invention relates to an improved cereal suspension that is manufactured by a novel method. Due to the novel method, the consistency as well as the taste and the sweetness of the.suspension - can- be controlled. The method of manufacture includes steps where amylases are used in specific combinations, resulting in the degradation of beta-glucans in the oat and in an increase in the sweetness of the suspension. After the enzymatic treatment, beta-glucans from another source are added, a measure which enables an efficient control of the consistency of the suspension. The invention also relates to a cereal suspension that contains beta-glucans.

본 발명은 식용식물 또는 식용동식물 발효물의 제조방법, 이에 의해 제조된 식용식물 또는 식용동식물 발효물 및 이를 포함하는 식품에 관한 것으로, 식용식물 또는 식용동식물 발효물의 제조방법은, 식용식물 또는 식용동식물 분쇄물을 제조하는 단계; 곡류, 당류, 사상균, 효모 혼합액을 24~36시간 동안 배양하여 미생물 혼합 배양액을 제조하는 단계; 상기 식용식물 또는 식용동식물 분쇄물에 미생물 혼합 배양액을 접종하여 3~8일간 1차 발효하여 1차 식용식물 또는 식용동식물 발효물을 얻는 단계; 및 상기 1차 식용식물 또는 식용동식물 발효물에 세균을 접종하여 6~12일간 2차 발효하여 2차 식용식물 또는 식용동식물 발효물을 얻는 단계를 포함한다. 이로써 발효기간을 단축시킬 수 있으며, 식품 변패 및 병원성 미생물의 성장을 억제할 수 있다. 또한 상기 방법으로 제조된 식용식물 또는 식용동식물 발효물을 식품에 첨가함으로써 저장 안정성을 부여하며, 생체 이용률을 증가시키며 향미를 개선시킬 수 있다.

A method of treating grain for use in animal feed is described. The method includes the steps of a) introducing additional moisture into the grain, preferably at a predetermined temperature, b) subjecting the moistened grain to a rest phase; and then c) heating the grain at a temperature within a predetermined range for a predetermined time period. The resulting grain, in which carbohydrate and protein is altered such that it is protected from degradation in the rumen by microbial activity, is preferentially digested by the animal so that the animal is able to directly metabolise the nutritional components in the grain.

By the addition of highly concentrated xylanase enzyme(s) the efficiency of the conditioning process for the treatment of grain prior to milling is substantially improved, thereby providing for a substantial increase in the yield of flour, and/or reduction of the conditioning time, and/or improvement of the rheological properties of the flour/bran produced.
