The invention relates to an edible fat continuous spread comprising from 5 to 85 wt% fat and from 0.1 to 20 wt% plant sterol wherein the plant sterol is present in the form of elongated crystals. The invention further relates to a process for the preparation of an edible fat continuous spread comprising plant sterol, said process comprising the mixing of a first mixture comprising triglyceride oil and plant sterol present in the form of elongated crystals with a second mixture comprising one selected from the group consisting of fat phase, water phase and mixtures thereof, to provide a third mixture.

The invention provides, in one aspect, a method of administering a product comprising beta glucan, soy protein, phytosterols, and omega-3 fatty acids, such as one or more of DHA and EPA, to improve cardiovascular risk factors, such as LDL or total cholesterol levels. The amount of each of beta glucan, soy protein, phytosterols, and omega-3 fatty acids is selected from the amount providing the beneficial health effects associated with the health claims for these compositions or ingredients. Methods of making nutritional health bars and food ingredients that comprise the same compositions and ingredients in effective amounts that are shelf-stable are also disclosed.

A blood lipid lowering agent that functions through a same mechanism as berberine (e.g. berberine, one or more pharmacologically acceptable salts of berberine or a mixture thereof) and a blood lipid lowering agent that functions through a different mechanism than berberine (e.g. phytosterols, phytostanols, esters thereof or mixtures thereof) act synergistically to improve blood lipid profiles, for example, lowering total cholesterol, LDL-C or nonHDL-C, and triglyceride, and increasing the ratio of HDL-C to nonHDL-C. The two may be used in combination to treat or reduce the chance of contracting cardiovascular disease, hyperlipidemia, atherosclerosis, coronary heart disease, angina, cerebrovascular disease, stroke, overweight or obesity, diabetes, insulin resistance, hyperglycemia, hypertension, arrhythmia, diseases of the central nervous system, diseases of the peripheral nervous system and/or inflammation. The blood lipid lowering agent that functions through a same mechanism as berberine, with or without the blood lipid lowering agent that functions through a different mechanism than berberine, may also be used to control weight.

The invention relates to a concentrated or dried milk product having cholesterol-lowering effects and to methods for preparing the same. Provided is a process for the preparation of a milk concentrate or milk powder having a cholesterol-lowering effect, comprising : - preparing a milk liquid; - preparing a fat fraction comprising at least one sterol; and - subjecting the milk liquid to an evaporation procedure, during which procedure the fat fraction is added to the milk liquid before, in or after the liquid collector of one or more effects of the evaporator. Also provided is the product obtainable thereby.

The invention provides a nutritional supplement which includes phytosterol to facilitate reduction of cholesterol. The nutritional supplement may be a swallowable tablet, chewable tablet, sachet, capsule or suspension. The invention further provides a method for tableting one fourth to one half of the daily effective dosage of a phytosterol containing nutritional supplement in a practical sized swallowable tablet and a method for reducing blood cholesterol in humans.
