La presente invención se refiere a una mezcla de probióticos, prebióticos y nutriente con acción simbiótica sinérgica y su proceso de elaboración. Dicha mezcla esta compuesta de al menos una cepa probiótica que se selecciona de lactobacillus, bifidus, streptococos y/o levaduras; al menos un prebiótico que básicamente es inulina a Ia cual se Ie adicionan: un carbohidrato simple el cual es glucosa, y/o un monosacárido el cual es azúcar y aminas las cuales son vitamina E, clorohidrato de Piridoxina, acido fólico, Vitamina B12 y ácido ascórbico y nutrientes para consumo humano que se adicionan son: proteínas de origen animal o vegetal, con o sin Ia presencia de los nueve aminoácidos esenciales, lípidos preferenciando los de cadena corta, omegas y carbohidratos también de cadena corta para liberación de energía en metabolizaciones simples. Esta novedosa mezcla al ser integrada a un alimento primario o procesado evoluciona a un alimento funcional (alimento que logra Ia modulación de una función orgánica en el cuerpo humano).

A shelf-stable consumable composition may comprise one or more Probiotic-Mimicking Elements (PMEs) wherein the median particle size of the one or more PMEs is less than the median particle size of a probiotic from which the one or more PMEs were derived. In some embodiments, the median particle size of the one or more PMEs may be less than about 0.2 microns. In some embodiments, the PMEs may comprise at least one of peptides, fatty acids, bacteriocins, cell surface proteins, phospholipids, teichoic acids, and nucleic acids, and may be combined with one or more prebiotics, such as oligosaccharides, inulin, short-chain fructo- oligosaccharides, xylooligosaccharides, galactooligosaccharides, soyoligosaccharides, and lactulose/lactitol. Methods for preparing and using a shelf-stable consumable composition for promoting digestive health in a subject are also described.

Dosage forms including pills, sprays, functional foods and cosmetics may achieve this benefit while being essentially free of storage protein from nongerminated seeds of Ricinus communis.

One aspect of the invention provides dietary fiber compositions comprising a fiber blend comprising from about 48% to about 90% (w/w) glucomannan, from about 5% to about 20% (w/w) xanthan gum, and from about 5% to about 30% (w/w) alginate, and at least one lipid or blend thereof, wherein the lipid or blend thereof comprises at least 20% w/w of the total dietary fiber composition. The invention also provides food products comprising an effective amount of a dietary fiber composition. In other aspects, the invention provides methods for preparing a dietary fiber composition or a food product comprising a dietary fiber composition and methods for promoting satiety, promoting weight loss, lowering blood glucose, or lowering blood cholesterol levels in a mammal.

The invention is directed to a method of forming a gel, to a gel obtainable by said method, to a heat treated native potato protease inhibitor, to the use of said protease inhibitor, and to a foodstuff comprising said gel or said protease inhibitor. The method comprises the subsequent steps of: providing a solution of native potato protease inhibitor isolate having an isoelectric point of more than 6.0 and a molecular weight of less than 35 kDa; subjecting the native potato protease inhibitor solution to a heat treatment to a temperature of 65-121 °C for at least 10 minutes, or an UHT treatment at temperatures above 121 °C, at an ionic strength of less than 60 mM and a pH of less than 4.5 yielding a heat treated native potato protease inhibitor solution; and setting the ionic strength of the native potato protease inhibitor solution to more than 60 mM.
