A protein is provided derived from human fibroblast having an N-terminal amino acid sequence represented by SEQ ID NOS: 1 and 2, having a molecular weight of approximately 15kD under reducing and non-reducing conditions by (dosium dodecyl sulfate-polyacrylamide gel electrophoresis), and having an activity to stimulate growth of osteoblast. The protein is produced by gene engineering procedures, contains the amino acid sequence represented by SEQ ID NO: 9 and has osteoblast growth activity. Also provided is a method for preparing the protein by culturing human fibroblast and treating the conditioned medium for purification. The protein is utilized for the treatment of diseases characterized by decreased bone mass such as osteoporosis or is utilized as an antigen for immunological diagnosis of diseases.

Processed oats having a remarkably decreased viscosity when dispersed in hot water or boiling water, a method of preparing the same, and a food and beverage containing the same are disclosed. The processed oats may be prepared by contacting pressed oats with water or an aqueous protein solution and then drying the oats. The contacting of oats with the aqueous protein solution may be carried out before the pressing of the oats.

Micellar whey protein obtained by the heat treatment of whey protein having undergone limited hydrolysis by a proteolytic enzyme and containing whey protein molecules having a micellar structure similar to that of casein micelles, the micellar whey protein being characterized in that:(1) the molecules are in the form of micelles of irregular shape having a molecular weight of not less than 1,000,000 and a molecular size of 30 to 500 nm;(2) the micellar whey protein is soluble in water and gives a milk-white solution; and(3) the micelles associate together in a solution having a pH in the acid range of 3 to 6 to form insoluble aggregates.This micellar whey protein is so stable that it does not undergo gelation even when heated in solution, and can hence be widely utilized in liquid drink compositions, processed foods and the like.

This invention provides compositions for fair-skin containing the phosphorylated polysaccharides produced by lactic acid bacteria as an effective ingredient. Precut, solid water-in-oil emulsion compositions are prepared by providing a mold having an outer frame and a plurality of configured partitioning plates disposed within the outer frame. The mold is at least partially filled with a fluid form of the emulsion so as to form precuts in the emulsion corresponding to the partitioning plates. The emulsion is then allowed to set. An extrusion die is advanced into the mold. The extrusion die has grooves configured complimentary to the configuration of the partitioning plates so as to receive the partitioning plates therein. The set emulsion is then discharged from the mold by at least partially passing the extrusion die through the mold so as to discharge the set emulsion with the precuts therein.

The present invention provides a well-digestible and well-absorbable edible oil and fat composition containing 20% by weight or more 2-palmitoyl-1,3-dioleylglycerol. Also a process for production of the above edible oil and fat composition which comprises fractionating the edible oil and fat composition to increase the content of 2-palmitoyl-1,3-dioleylglycerol to 20% by weight or more is disclosed. The edible oil and fat composition of the present invention is useful as a fat material used in diets for infants or for the sick.

An amorphous sialic acid powder is disclosed. It is prepared by rapidly freezing an aqueous solution of sialic acids and freeze-drying the frozen product. It has a melting point of 131.degree.-136.degree. C. (decomposed) and exhibits no peaks inherent to crystals in differential scanning thermal analysis (at 165.degree.-200.degree. C.) and X-ray diffractiometric pattern (in the range of 5.degree..ltoreq.2.theta..ltoreq.40.degree.). The amorphous sialic acid powder is highly reactive and can be used as a raw material for drugs and the like.
