The vibrating tubing is a flat coil, a standing spiral, or a flume. The encapsulation apparatus includes a winding having coils disposed in an aqueous gelling solution. The winding is rotatable about its longitudinal center axis. The winding has adjacently spaced coils forming a plurality of chambers. Objects to be encapsulated are added to the apparatus such that when the winding is rotated, the chambers transport a volume of objects through the length winding in the aqueous gelling solution in a predetermined time.

An apparatus for preparing an alimentary granular soft caviar similar to black granular caviar is described. The grains of caviar are by supplying a mixture containing an albuminous colloid, water, and alimentary gelatin under pressure though gauged channels to a cavity with heated vegetable oil in its upper section, separating and washing the grains, tanning the grains in a tea extract, water washing, washing with salt solution, introducing to the product of a gustatory component and mixing the grains with vegetable oil. The apparatus includes a cavity containing the initial mixture, outlet pipes with stream-forming heads, a source of gas pressure, a cylindrical granulating cavity for forming grains of the product, a nipple for draining excess forming liquid, water jackets around the cavity and the granulating cavity, and a receptacle at the bottom of the granulating cavity for accumulation of the produced grains. The apparatus also contains a compressor supplying impulse gas into the granulating cavity through pipes located at the top of the granulating cavity oriented horizontally to the center of the granulating cavity. The top of the granulating cavity is wider than the body of the granulating cavity, in the shape of a funnel, and is enclosed by a heating unit, connected to a controller.

According to the present invention the product contains an aqueous colloidal solution of proteins, gelatin, ions of alkaline earth metals, polysaccharides capable of forming ionotropic gels when interreacting with the above-said ions, and vegetable tannins, preferably tannides, the products resulting from the interreaction of polysaccharides with ions of metals, and of vegetable tannins with proteins being contained in the membrane or pellicle of the granules.

An installation for the production of granulated products preferably imitation soft caviar, is provided with a granules forming device fed into which is a source protein solution supplied from a device wherein it is prepared. The granules forming device communicates, in succession, with an arrangement for separating granules from the forming device, a sorting device, a device for treating granules with water solutions of different substances and a device for mixing the treated granules with taste and aroma substances. Said installation is equipped with a feed-control device provided above the forming device and permits the obtaining of equally sized granules in the forming liquid. The continuity of the installation''s operation is achieved by providing a conveyer that assembles the vessels of the device for treating granules with water solutions of various substances as well as by providing a centrifuge in the device for separating granules from the forming liquid, said centrifuge designed to ensure the continuous feed of granules separated from the forming liquid to the device for treating said granules with water solutions.
