A process for the production of Monascus-pigment comprises cultivating, in a nutrient medium containing maltitol, a microorganism of genus Monascus capable of producing said pigment, and harvesting the resultant pigment from the culture.The process advantageously leads to an extremely higher Monascus-pigment production in comparison with that obtained by conventional process, and, therefore, provides a sufficient amount of the pigment to food industry, where demand for naturally-occurring coloring agent with a high degree of safety is increasing.

2-O-.alpha.-D-Glucopyranosyl-L-ascrobic acid is crystallizable in its supersaturated solution. Crystalline 2-O-.alpha.-D-glucopyranosyl-L-ascorbic acid is substantially nonhygroscopic, free flowing, free of deliquescence, consolidation and direct reducing activity, but is readily soluble in water. Because of these, crystalline 2-O-.alpha.-D-glucopyranosyl-L-ascorbic acid is handleable with an ease, and superiorly high in stability and physiological activities. Thus, crystalline 2-O-.alpha.-D-gluco-pyranosyl-L-acorbic acid is favorably useful in vitamin C-enriching agents, foodstuffs, pharmaceuticals and cosmetics.

Disclosed are a novel preparation of neotrehalose and its uses. The preparation comprises allowing .alpha.-amylase to act on an amylaceous substance to form neotrehalose, and recovering said neotrehalose. The neotrehalose has a satisfiable chemical stability, as well as other properties such as a sweeteness, energy-imparting ability, osmosis-regulating ability, filler-imparting ability, gloss-imparting ability, moisture-retaining ability, viscosity-imparting ability, crystallization-preventing ability, and non-fermentability. These properties render the neotrehalose advantageously useful in preparations of a variety of compositions.

Anhydrous lactitol is converted into the crystalline hydrate and acts as the desiccant when incorporated into a hydrous product. The dehydration is applicable to hydrous products, such as foods, pharmaceuticals, cosmetics, and their materials and intermediates.

A crystalline alpha-maltose with an alpha-maltose isomer content of 55% or higher is prepared by the process comprising preparing a high-concentration syrup, with a moisture content lower than 10 w/w %, from a high-purity maltose with a maltose content of 85% or higher; crystallizing alpha-maltose from the syrup at a temperature within the range of 50.degree.-130.degree. C. in the presence of seed crystal; and recovering the resultant crystalline alpha-maltose with an alpha-maltose isomer content of 55% or higher. The crystalline alpha-maltose is superior to crystalline beta-maltose hydrate in solubility and dispersibility in aqueous media. The crystalline alpha-maltose is a suitable maltose material for food products and pharmaceuticals. A ready-mix-type parenteral hyperalimentation which is highly resistant to browning and alteration is prepared with the crystalline alpha-maltose.

Disclosed are hitherto-unknown erlose hydrate, a mixture solid containing the same, and their production and uses. One mole of the erlose hydrate has 1 or 3 moles of cystallization water. The erlose hydrate and a mixture solid containing the same are readily dissolvable in water, non- or scarcely-hygroscopic, low-cariogenic, low-calorific, and, therefore, favorably usable to prepare orally-usable products, e.g. foodstuffs in general, cosmetics, dentifrices, pharmaceuticals, and chemicals.
