Abstract: An apparatus and method for maintaining a pattern of non-rigid objects in a desired position and orientation. The first surface, second surface, and third surface are mutually orthogonal and meet at a point to form a lowest corner. The second and third surfaces are supported by, attached to and extend at least somewhat vertically from the apparatus. The first surface is oriented at an angle to a plane running through a bottom of the apparatus and thereby provides the lowest corner.

Abstract: A pellet-coated food product and method of making the food product. In a first aspect, the invention provides a method comprising the steps: extruding an extruder feed stream to provide an extrudate; pelletizing the extrudate to provide extruded pellets; drying the pellets to provide dried pellets; providing at least a portion of an outer surface of a substrate with an adhesive to provide an adhesive substrate; applying at least a portion of the pellets to the outer surface of the substrate to provide a pellet-coated food product comprising the substrate and the pellets; and freezing the food product. In a second aspect, the invention provides a frozen, pellet-coated food product. The food product comprises a substrate comprising an outer surface and a substrate coating adhered to the outer surface of the substrate. The substrate coating comprises pellets, for example unexpanded pellets.

Abstract: An improved rotary head extruder incorporates an auger system comprising more than one auger to create asymmetrical, substantially cylindrical extruded products having a density within the range of about 3.0 to about 6.0 lbs./cu ft. A wide variety of fine particles such as flour and powder can be successfully introduced into and conveyed within a rotary head extruder to the die assembly, where the materials are cooked to form hard, dense extruded collets with randomly asymmetrical shapes. A transition piece at the downstream end of the augers allows for continuous, uniform flow to the die assembly, where cooking takes place. Using the equipment described, raw materials other than the typically used corn meal are produced, while maintaining the desired bulk density, texture, and crunch of random extruded products.

Abstract: A photo acoustic non-destructive measurement apparatus and method for quantitatively measuring texture of a liquid. The apparatus includes a laser generating tool, an acoustic capturing device, and a data processing unit. The laser generating tool directs a laser towards a surface of a liquid contained in a container and creates pressure waves that propagate through the air and produce an acoustic signal. The acoustic capturing device records and forwards the signal to a data processing unit. The data processing unit further comprises a digital signal processing module that processes the received acoustic signal. A statistical processing module further filters the acoustic signal from the data processing unit and generates a quantitative acoustic model for texture attributes such as hardness and fracturability. The quantitative model is correlated with a qualitative texture measurement from a descriptive expert panel. Textures of liquids are quantitatively measured with the quantitative acoustic model.

Abstract: A system and method for controlling blisters. The method begins by mixing the ingredients to form a dough with a moisture content between about 35% and 60%. The dough is sheeted and cut. Thereafter, the dough is pre-heated to reduce the moisture content to between about 10% and about 45%. The preforms are then docked and dehydrated. The docking system, in one embodiment, has a backing plate and a docking device with at least two docking pins of varying lengths. The docking device is adjustable relative to the backing plate. The system also has a removing plate which removes preforms from the docking pins.
