A lactulose-containing powder composition is produced by preparing a raw material liquid so that a lactulose content within a powder produced following spray drying is 10 to 50% by weight, a protein content is 0.2 to 9.0 parts by weight per 1 part by weight of lactulose, and a chlorine content is no more than 0.08 parts by weight per 1 part by weight of protein, and subsequently subjecting this raw material liquid to spray drying.

The present invention provides a method for production of a spread, comprising the steps of:(a) two aqueous phases with different particle sizes in a fatty phase, of which at least one aqueous phase is dispersed into the fatty phase through a microporous membrane, to prepare a mixed water-in-oil type emulsion;(b) rapidly cooling the emulsion to plasticize; and(c) kneading the plasticized emulsion.According to the present invention, it is possible to produce a low-fat spread having good taste easily, which does not require a stabilizer or a gelling agent, is excellent in stability and preservativity on a level never achieved by any conventional methods.

A measurement position of the rotary body at which the measurement liquid is to be measured with the light from the light source is set by: rotating the rotary body to obtain a light value of light which is emitted from the light source and received by the light-receiving unit through the aperture; and setting a rotational position of the rotary body where the light value is a threshold value or more, as the measurement position.

Lactoferrin tablets comprising as the active ingredients lactoferrin and lactulose and having a horizontal hardness of at least 4 kg and a vertical hardness of at least 3 kg; and lactoferrin tablets comprising as the active ingredients a microbial cell powder of at least one microorganism selected from among lactic acid bacteria, lactoferrin and lactulose and having a horizontal hardness of at least 4 kg and a vertical hardness of at least 3 kg. These tablets can be produced by using the conventional tableting apparatuses and yet have high hardness. Thus, they do not adhere to the inner wall of the oral cavity and have a favorable taste. Since no excessive tableting pressure is needed in the production process, moreover, these tablets can contain much viable cells of lactic acid bacteria, though they are in the form of rigid tablet.

The present invention provides a safe antioxidant applicable for food, drug medicine, non-medical drug and other products. The antioxidant of the present invention contains, as an effective ingredient, an antioxidant substance selected from the group consisting of a hydrolysate of lactoferrin, one or more peptides isolated from a hydrolysate of lactoferrins, one or more synthetic peptides having the same sequence as that of the peptide isolated from the hydrolysate of lactoferrins, and any mixture thereof, or said antioxidant substance and oxidant preventive agent. This antioxidant has an excellent antioxidant action for various lipids, and is very safe even when used in foods and drug medicine. Scince it exhibits antioxidant effect with only small quantity, there is almost no adverse effect on flavor even when applied in foods and the like.

Lactoferrin hydrolyzates, having a decomposition rate between 6%-20% as measured by formol titration, for use as an antibacterial agent and which have remarkly more potent activity than unhydrolyzed lactoferrin; and lactoferrin hydrolyzates, having a decomposition rate between 4-50% as measured by formol titration, for use as a tyrosinase inhibition agent, are obtainable by conventional methods for hydrolysis with acids or enzymes, and are stable to heating.
