摘要： The present invention relates to a prebiotic composition comprising a galacto oligosaccharide (GOS) produced from Lactobacillus plantarum, wherein the GOS acts as a selective growth medium for a chosen Lactobacillus plantarum probiotic bacterial strain, and wherein the GOS is substantially the same as the form produced by reverse β-galactosidase reaction in the chosen probiotic bacterial strain. The present invention also relates to methods of producing GOS and related composition incorporating the GOS.

摘要： A dry stable probiotic composition is provided. The composition comprises one or more viable probiotic microorganisms, one or more hydrolyzed proteins, one or more disaccharides, one or more oligosaccharides, and one or more polysaccharides, but not trehalose. The composition has viability of at least 1×1010 CFU/g, and a viability loss of less than 1 log unit/g after 3 months at a temperature of 40° C. and a relative humidity of 33%. Also provided are methods for preparing the dry stable probiotic composition.

The invention further relates to a method for estimating, in the same manner, the health risk associated with obesity.

摘要： Microparticles include a matrix of an encapsulating material, in which are dispersed particles of a low melting point fat and a bioactive material, such as one or more probiotic bacteria. The microparticles are formed by preparing an emulsion of melted low melting point fat in an aqueous mixture of the encapsulating material, cooling the emulsion below the melting point of the low melting point fat, dispersing the bioactive material in the emulsion and spray drying the emulsion. The particles of solid low melting point fat are believed to protect the bioactive material from heat damage during the spray drying process.
