An optimized nutrient food for optimization of bodily functions and thereby maintenance of health, prevention of diseases and delaying aging. The optimized nutrient food includes about 28 % to about 36 % of protein, about, 17 % to about 26 % of dietary fiber, about 6 % to about 10 % of omega 3 fatty acid, about 6 % to about 10 % of omega 6 fatty acid, about 4 % to about 8 % of omega 9 fatty acid, about 2 % to about 6% of saturated fat, about 4 % to about 13 % of starch/sugar, about 6 % to about 10 % of vitamins and minerals, about 2 % to about 5 %, by weight of water and, a ratio of omega 3 fatty acid to omega 6 fatty acid ranging from about 0.75:1.25 to about 1.25:0.75. Disclosed is a process comprising: mixing a soy protein-containing material with an aqueous medium; removing the non-solubilized solids from the slurry to form an aikaiine liquid containing solubilized soy protein; adjusting the pH of the solubilized soy protein liquid to between about 3.8 and about 6.6, to precipitate soy protein from the liquid; separating the precipitated soy protein from the pH-adjusted soy protein liquid; resolubilizing the separated soy protein precipitate in an aqueous medium at a pH of from about 1.8 to 3.2; treating the resolubslized soy protein with at least one water-soluble calcium salt to form a calcium- enriched soy protein mixture; precipitating soy protein from the calcium-enriched soy protein mixture by adjusting the pH of the mixture to between about 3.8 and about 6.6; separating the precipitated soy protein from the calcium-enriched soy protein mixture; and washing to form calcium-enriched soy protein isolate having selectively reduced manganese concentrations.
