摘要: An enzymatically produced soluble α-glucan fiber composition is provided suitable for use as a digestion resistant fiber in food and feed applications. The soluble α-glucan fiber composition can be blended with one or more additional food ingredients to produce fiber-containing compositions. Methods for the production and use of compositions comprising the soluble α-glucan fiber are also provided.

摘要: Reaction solutions are disclosed herein comprising water, sucrose and a glucosyltransferase enzyme that synthesizes poly alpha-1,3-glucan. The glucosyltransferase enzyme can synthesize insoluble glucan polymer having at least 50% alpha-1,3 glycosidic linkages and a number average degree of polymerization of at least 100. Further disclosed are methods of using such glucosyltransferase enzymes to produce insoluble poly alpha-1,3-glucan.

摘要: Disclosed herein are aqueous compositions comprising fructose and methods of production thereof. A method for producing an aqueous composition comprising fructose can comprise, for example, conducting an enzymatic reaction by contacting water, sucrose, and a glucosyltransferase enzyme that synthesizes poly alpha-1,3-glucan having at least 30% alpha-1,3-linkages. A soluble fraction produced by such a reaction comprises at least about 55% fructose on a dry weight basis, and can be separated from insoluble poly alpha-1,3-glucan product(s), thereby providing an aqueous composition comprising fructose.

摘要: Compositions are disclosed herein comprising poly alpha-1,3-1,6-glucan with a weight average degree of polymerization (DPw) of at least 1000. This glucan polymer comprises at least 30% alpha-1,3 linkages and at least 30% alpha-1,6 linkages. Further disclosed are glucosyltransferase enzymes that synthesize poly alpha-1,3-1,6-glucan. Ether derivatives of poly alpha-1,3-1,6-glucan and methods of using such derivatives as viscosity modifiers are also disclosed.
