It is an object of the present invention to provide methods for producing vitamin D that gives improved yields and reduced side product contamination. In various aspects, these methods provide for production of vitamin-D2 using ergosterol as provitamin D2 or a dihydroxy derivative thereof as a starting material, or production of vitamin-D3 using 7-dehydrocholesterol as provitamin D3 or a dihydroxy derivative thereof as the starting material. The methods described herein comprise irradiating the starting material in a solution including an organic or inorganic base with light in the wavelength range 245-360 nanometers (nm) to obtain a product containing pre-vitamin-D2 or pre-vitamin-D3, and heating the product to convert the resulting pre-vitamin-D2 or pre-vitamin-D3 to vitamin D2 or vitamin D3. In various embodiments, these methods further comprise recovering vitamin D2 or vitamin D3 from this reaction as a purified product.

The present invention provides novel, simple and reliable methods for extraction of fat soluble vitamins (FSVs) from a sample matrix obtained from food products (e.g., vitamin-enriched foods and fortified food matrices) or biological samples. In certain aspects, the invention provides solid phase extraction (SPE) methods. In certain embodiments, the invention relates to two-step elution methods, which provide excellent recovery of all fat-soluble vitamins from complicated food matrices (such as, vitamin-enriched foods and fortified food products) or biological samples in a simultaneous manner. In certain embodiments, the invention uses OASIS® materials as sorbent beds for separating and/or extracting FSVs from the sample matrix.

An improved filamentous fungi is disclosed that has an enhanced nutritional profile by utilizing pulsed ultraviolet irradiation. According to the invention, the vitamin D component of mushrooms and other filamentous fungi may be drastically increased with no deleterious affects on appearance with the use of pulsed UV radiation. Mushrooms so treated had up to 1800% DV in one serving of fresh mushrooms.

The invention encompasses compositions and methods for effectively treating and/or preventing diabetes and/or obesity. This is accomplished by totally addressing the multiple mechanisms that lead to such conditions. The invention includes compositions comprising a combination of agents that effectively suppress, regulate or interfere with the various biochemical processes and mechanisms that lead to diabetes and obesity.
