The present invention also provides for processing of a digestible carbohydrate-based ingredient with a non-digestible food film material, to provide a resulting reduced digestible carbohydrate food containing a viscosity-building component that contributes to the formation of a viscous intestinal chyme that can inhibit or prevent digestion of the digestible carbohydrate and can inhibit adsorption of digestion products of digestible carbohydrates in the small intestine.

A hydrocolloid dry-blend mixture is added to water and blended in homogenizing equipment, forming a first mix. The first mix is transferred to a kettle/tank and a first liquid mixture comprising modified polydextrose is added to the first mix to form a second mix. A second liquid mixture comprising at least one acid is added to the second mix, and the resultant solution is maintained in a predetermined temperature range. The resultant solution is transferred to at least one aluminum pan. The at least one aluminum pan is lightly sprayed with a nozzle applying an atomized release agent and placed in a cooling room.

A no-laxation, low flatulence bulking system and a method for preparation of same is disclosed. Gelatin, pectins and gellan gum are combined to form a dry-blended mixture. A second set of ingredients comprising at least erithritol is combined. A first liquid mixture comprising modified polydextrose and water is formed. The first dry-blended mixture is added to the first liquid mixture, forming a first mix. The second dry-blended mixture is added to the first mix, dimethicone is added, and the combination is heated to a first predetermined temperature. The heat is then reduced to a second predetermined temperature, and a second liquid mixture comprised of at least one acid and water is added. The second liquid mixture also may preferably include fruit concentrate, flavor, color and/or sucralose. The resultant solution is then preferably stirred constantly and held in a kettle or mixing tank for panning or molding as desired.
