    摘要: The invention pertains to a plant or vegetable pulp composition comprising: a) plant or vegetable pulp comprising 5-30 wt % cell wall materials comprising or consisting of cellulose, hemicellulose, lignin and/or pectin, and/or fragments and/or hydrolysates thereof, wherein said pulp is obtained by disrupting plant or vegetable cell membranes and removing at least part of the intracellular content; b) 45-85 wt % of one or more water-soluble carbohydrate(s) selected from the group consisting of inulin, oligofructose, fructo-oligosaccharide, galacto-oligosaccharide, glucose, maltose, maltodextrins, polydextrose, sucrose, fructose, lactose, isomaltulose and polyols, and/or combinations thereof; and c) 5-25 wt % water, all numbers based on total weight of said composition. The invention also pertains to the method of preparing such a composition, and the use in (human) food applications.

    摘要: A food material capable of suppressing the genesis of breast cancer or proliferation of terminal breast cancer. An extract of Agaricus Blazei Murill comprising an ingredient capable of suppressing the genesis of breast cancer or proliferation of terminal breast cancer is provided. This ingredient can be a chromatographic main elution fraction of 100 to 2000 molecular weight obtained through the steps of extracting the fruit body of Agaricus Blazei Murill with hot water, dialyzing the obtained extract and subjecting the obtained dialysis external fluid to chromatography. Alternatively, the above ingredient can be a dialysis external fluid obtained through the steps of extracting the fruit body of Agaricus Blazei Murill with hot water, adding ethanol to the obtained extract to thereby obtain precipitates, and dissolving the precipitates in water and dialyzing the resultant solution.

    摘要: Compositions and methods for a food binder that, when blended with a solid nut blend, provides a cohesive shelf-stable low water activity product that is chewy and has high lubricity (i.e., not tooth-compacting). One embodiment of a binder composition can have an aqueous based syrup in a range from about 33 to 74 percent weight; sucrose in a range from about 10 to 35 percent weight; polyhydric alcohol in a range from about 2 to 20 percent weight; fat in a range from about 2 to 30 percent weight; and an emulsifier in the range from about 0.5 to 2 percent weight. In a preferred embodiment, the syrup/sucrose:fat:polyhydric alcohol ratio is about 9:3:1 respectively by weight. Also, in a product using the binder, the binder can be in the range of about 25 to 35 percent weight and have an Aw less than about 0.35.

    摘要: The present invention provides a binder syrup comprising polydextrose, crystalline fructose and glycerin. The binder syrup has a low water activity of less than 0.55 and provides a significant amount of fiber. The binder syrup is disposed on particulates, such as whole grains, rolled oats, and fruit pieces, to form food products, such as ready-to-eat cereals and granola bars. The binder syrup also provides a desirable taste and maintains a chewy texture when used in the food products.
