摘要： The present invention relates to a method of producing a phytosterol ester and/or a phytostanol ester comprising: a) admixing a phospholipid composition comprising at least between about 10% to about 70% plant phospholipid and at least about 5% water; a lipid acyltransferase; and a phytosterol and/or a phytostanol; and b) separating or isolating or purifying at least one phytosterol ester and/or phytostanol ester from said admixture. The present invention also relates to compositions comprising the phytosterol ester and/or phytostanol ester produced by this method, including foodstuffs and personal care product (cosmetic) compositions.

摘要： A method for producing a phospholipid-containing composition which includes 10% by weight or more of phosphatidylserine based on the whole phospholipid-containing composition, a content of a polyunsaturated fatty acid being from 10 to 40% by weight based on the total amount of constituent fatty acids, the method including the following steps (1) and (2) in this order, and the following steps (3) and (4) in this order inexpensively and stably supplies a phospholipid-containing composition which includes phosphatidylserine to which a large amount of the polyunsaturated fatty acid is bonded at the 2-position thereof. Step (1): performing an esterification reaction of a polyunsaturated fatty acid with lysophospholipid using phospholipase A2 (PLA2) to obtain phospholipid. Step (2): adjusting an activity of PLA2 in the phospholipid to 10 U/g (phospholipid) or less after the step (1). Step (3): performing a base exchange reaction of a mixture including the phospholipid and serine in the presence of phospholipase D (PLD) to form a phospholipid-containing composition which includes phosphatidylserine. Step (4): separating the composition.

摘要： The present invention discloses processes a process for the preparation of phosphatide-salt complexes, the process including the steps of: using at least one raw material lecithin as a substrate; and enzymatically processing at least one raw material lecithin with phospholipase-D, racemic or enantiomerically-pure serine, and/or amine in an aqueous carboxylate-salt-complex solution, wherein the step of processing is performed in a single-phase reaction environment, to produce phosphatide-salt complexes having a structural fatty-acid chain derived from at least one raw material lecithin. Preferably, the step of processing is performed at a pH in the range of about 4.5-8.0 at a temperature in the range of about 25-60° C. Preferably, the aqueous carboxylate-salt-complex solution is formed from an aqueous solution of a carboxylic acid with a chain length of C2-C8 and a salt in an approximately 1:2 (weight per weight) acid-to-salt ratio.
