摘要: The present invention relates to a granulated sorbitol of essentially γ crystalline form and having a high sorbitol content, characterized in that it has a specific surface area, determined according to the BET method, of greater than or equal to 2 m2/g, preferably of between 2.2 and 4 m2/g, and even more preferably of between 2.5 and 3.5 m2/g, a compressibility of between 200 and 400 N, preferably of between 250 and 350 N, and a volume-average diameter, measured by laser diffraction particle sizing using a dry-system module, of between 260 and 1000 μm, preferably of between 260 and 500 μm, and even more preferably of between 260 and 350 μm.

摘要: A method of manufacturing an eutectic crystalline sorbitol/maltitol that represents a single melting peak obtained by differential scanning calorimetry. The method includes combining a liquid composition containing two or more kinds of the sugar alcohol at a predetermined ratio with a powder containing crystals of the same two or more kinds of the sugar alcohol at substantially the same usage ratio as that of the sugar alcohol to obtain a mixture, and kneading and aging the mixture.

摘要: A composition comprising at least one polyol and at least one emulsifying starch has use as a milk replacer in the production of food products such as dairy products, bakery products, confectionery and convenience food products. Also disclosed is a milk replacer composition which comprises at least one polyol, at least one emulsifying starch and at least one fat. The emulsifying starch is, preferably, an n-alkenyl succinate starch, more preferably n-octenyl succinate starch. The polyol is preferably selected from sorbitol, maltitol and mixtures thereof.

The sweetness enhancer is selected from naringin dihydrochalcone, mogroside V, swingle extract, rubusoside, rubus extract, rebaudioside, and stevioside.
