본 발명은 마쇄 두유를 소포제의 투입 없이 적정 온도에서 장치 내의 압력을 감압 및 대기압 상태로 반복 조절하면서 발생한 기포를 파포하여 두유의 끓임을 균질하게 하고, 응고제와의 반응속도가 지연되는 두유를 제조하는 방법, 상기 제조 방법으로 제조된 두유를 이용하여 두부를 제조하는 방법, 및 이런 제조 방법으로 제조된 균질하고 이취가 적어 풍미가 풍부한 두유 및 두부에 관한 것이다. 또한 본 발명은 마쇄 두유를 소포제의 투입 없이 적정 온도에서 장치 내의 압력을 대기압 및 가압 상태로 반복 조절하면서 발생한 기포를 파포하여 두유의 끓임을 균질하게 하고, 응고제와의 반응속도가 지연되는 두유를 제조하는 방법, 상기 제조 방법으로 제조된 두유를 이용하여 두부를 제조하는 방법, 및 이런 제조 방법으로 제조된 균질하고 풍미가 풍부한 두유 및 두부에 관한 것이다.

La présente invention est relative à une formulation nutritionnelle de type yaourt, une crème, une crème dessert, un dessert glacé ou sorbet et un fromage et contenant un isolât de protéines de pois, caractérisé en ce que l'isolât de protéines de pois : présente entre 0,5 et 2 % d'acides aminés libres, présente une viscosité : de 13 à 16.10 -3 Pa.s. à un taux de cisaillement de 10 s -1 , de 10 à 14.10 -3 Pa.s. un taux de cisaillement à 40 s 1, et de 9,8 à 14.10 -3 Pa.s. à un taux de cisaillement de 600 s -1 , présente une solubilité : de 30 à 40 % dans des zones de pH de 4 à 5 de 40 à 70 % dans des zones de pH de 6 à 8. Elle concerne également l'utilisation de cette formulation nutritionnelle comme source protéique unique ou comme complément alimentaire, destiné aux nourrissons, enfants et/ou adultes.

Visually distinct, flaked Ready-to-Eat ("R-T-E") cereal products with varied texture and thickness are produced by forming a cereal dough and forcing the same through an extrusion die assembly including various spaced openings which establish a plurality of dough streams which are merged prior to reaching a die outlet. Directly at the die outlet, a resulting dough extrudate is sliced by a cutter unit to form dough discs which are then dried and cooled, during which the discs curl and form cereal flakes having varying textures defined, at least in part, by distinct sets of surface bumps. The number and configuration of the bumps can be altered by changing the number, shape and/or position of the various spaced openings of the die assembly, while the thickesses of the resulting cereal flakes can be varied by just altering an operational speed of the cutter unit.

An oil-free, non-dairy, shelf-stable liquid whitening composition having a whitening agent and a stabilizing system is disclosed. The stabilizing system includes a hydrocolloid component, preferably of a blend of microcrystalline cellulose (MCC), carboxymethylcellulose (CMC) and carrageenans, in an amount sufficient to suspend the whitening agent both in the liquid whitening composition and in an aqueous media to which the liquid whitening composition is added; and a buffer to ensure sensory quality. The stabilizing system maintains the liquid whitening composition in a homogeneous state in the composition for at least about 9 months at ambient temperatures, and further maintains the whitening composition in suspension when added to the aqueous media.

The current invention relates to a composition comprising a) from 20 w/w% to 70 w/w% cereal proteins, b) from 25 w/w% to 70 w/w% maltodextrin, c) from 1 w/w% to 20 w/w% amino acids, and d) from 0 w/w% to 20 w/w% minerals, and e) from 0 w/w% to 45 w/w% fat. The composition is prepared according to a process wherein maltodextrin and cereal proteins are mixed and liquid amino acids are added, followed by drying to appropriate dry substance. The composition can be applied in food and feed applications as milk powder replacer.
